Susan Wysocki (left) has had a career as a banker, a chef, and a college professor. She has been teaching in the business management department at The Culinary Institute of America since 1999. In addition, she is the owner and operator of Babycakes Café in Poughkeepsie, New York, where she lives with her two sons, Alex and Oliver.

Michael Nothnagel (center) has taught mathematics at the high school, community college, and university levels for the past 14 years. He has been a faculty member at The Culinary Institute of America since 2006. He also constructs crossword puzzles for major newspapers and other venues.

Laura Dreesen (right) has been with The Culinary Institute of America for 15 years. During that time, she has taught mathematics, cost control, introduction to computers, and computers in the food business and is coauthor of the college's personal finance course. She is an avid gardener and a foodie through and through.

Good for the kitchen, missing business section

I attended the CIA a number of years ago and felt like I learned a great deal about the mathematics of running a business as well as a kitchen. I purchased this book expecting to find both sets of information now that I am responsible for the business as a whole. Unfortunately, this book only contains the algebra necessary to do recipe costing, and half of it is worksheets. There is no information necessary to do P&L calculations or any other larger business concerns.

Ktichen Math 101

I'm not really sure how to rate this because it does do what it says it will, I suppose, but it isn't at all what I was looking for. I own a restaurant and have come up with my own guidelines for managing food cost, but I was hoping for some professional verification that I'm doing it right. This isn't the book for that level of operations. This truly is just MATH - converting pounds to ounces, ounces to tablespoons, that kind of thing. Scaling recipes up and down. And stuff like, "If I need 5 pounds of chopped onion, how many raw onions do I have to buy?" I was looking for something about restaurant math from the owner/manager standpoint. But if you're looking for Kitchen Math 101, I doubt you could do better.

I bought two other books on this subject. This one by far is the most outstanding, well written, easy to understand, in-depth and comprehensive of the three. I do recommend having your camera with you when you read this instructional manual. It covers so much material it's best to use the camera, as you follow the book. Easier to remember with a hands on approach. I don't think the writer missed any function of the Canon T5i.

The book Is excellent. The author explains the operation of the camera with good examples and provided settings he used in taking photos--good for understanding why various settings were used.

The topics were thorough, and the tips and tricks were informative. As a professional photographer, he shared his personal experiences which also were helpful.

About the Author
Sarah Mally is a single young woman with a heart for young ladies. She is the founder of Bright Lights, a discipleship ministry designed to equip young ladies to use the years of their youth fully for Christ. As of winter 2012, more than 500 Bright Lights groups have started worldwide. Bright Lights hosts Strong in the Lord and Radiant Purity conferences for mothers and daughters, trains and equips leaders of Bright Lights groups, and provides discipleship material for young ladies. AMAZING

I recently purchased this book and have enjoyed everything about it. I often find myself talking and thinking of things that I shouldn't, but often not knowing how to capture and stop those bad habits. Sarah Mally gives reason, examples, and Scripture of keeping yourself mentally and physical pure for the "Perfect ONE" God has for you. This book has helped to change my understanding of why it is so importantto choose God before anything and fill my whole heart with Him only. If you are a young girl struggling with feelings and thoughts you should purchase this book. PLEASE READ THIS BOOK!!!

Unrealistic expectations

My wife bought this book for our daughter. It appears to be written for girls that are home-schooled as some of the advice is unrealistic in a public school setting (e.g. make very little contact with boys and only say a few words when you do). My daughter has had multiple group projects that have involved one or more boys and involved them coming over to our house to work on said projects. She liked the other book she bought, "It's Not That Complicated: How to Relate to Guys in a Healthy, Sane and Biblical Way", much better.

Very sweet book

I read this book aloud to my 13 year old daughter so we could discuss it as we went along. It's a very sweet presentation of an immensely important subject. The language of the medieval stories is a bit corny at points, but the message is excellent. It is very good for young girls coming of age to have something that sets such high standards because the world we live in does not. I want my daughter to embrace and hold onto the knowledge that she is first and foremost the daughter of the King and to treasure the gift she is and will be in the future whether she is called to marriage, the single life or a religious vocation.

The most important message of this book to a young woman before marriage is that she is not waiting to get married, that marriage is not the ultimate goal in life, but that she needs to be the best God made her to be now. This is not a "how-to-catch-your-man" manual, and bravo for that!

First published in Latin in 1516, Thomas More's Utopia is one of the most influential books in the Western philosophical and literary tradition and one of the supreme achievements of Renaissance humanism. This is the first edition of Utopia since 1965 (the Yale edition) to combine More's Latin text with an English translation, and also the first edition to provide a Latin text that is at once accurate and readable. The text is based on the early editions (with the Froben edition of March 1518 as copy-text), but spelling and punctuation have been regularised in accordance with modern practices. The translation is a revised version of the acclaimed Adams translation, which also appears in Cambridge Texts in the History of Political Thought. The edition, which incorporates the results of recent Utopian scholarship, includes an introduction, textual apparatus, a full commentary and a guide to the voluminous scholarly and critical literature on Utopia.

My goal in writing this book is to begin bringing to meadmakers the breadth and depth of knowledge and resources that are available to beer brewers and winemakers. I sought to cover the many aspects of meadmaking in a comprehensive but easy-to-read fashion, and to provide readers with an understanding of the role quality ingredients play in creating a really pleasing mead.

This complex, diverse and romantic drink deserves more attention than it has received in print. It can range from bone dry to profoundly sweet, and can be crafted to complement any type of food. If I spread some of my enthusiasm for mead, and for this simple, fun and remarkably rewarding hobby, then I will have succeeded at my task.

About the Author
Ken Schramm has been a meadmaker and amateur brewer since 1988. He has served on the Board of Advisors of the American Homebrewers Association and is the founding Competition Director of America's oldest mead competition, the Mazer Cup. He is an avid home orchardist, cultivating more than 100 varieties of fruit at his home in Troy, Michigan. He is also a dedicated fly tyer and fisherman.

A well rounded, up-to-date guide to Mead-Making

Ken Schramm presents a clear, logical guide to the art and science of mead-making, presenting traditional methodology and more recently developed techniques (such as no-boil or low temp processing) in a nice balance. While there is an introduction to the history of mead, it is not a long, drawn-out affair as in many texts, focusing more on considerations that prompted the advancement of technique. Since you are reading this book with an eye towards creating your own mead, this will probably be more useful to you than an obtuse history lesson.

Coming more from a winemaking background, Ken's discussion on the use of sulphites in mead was the most helpful item to me personally- with friends and family members sensitive to sulphites, it hadn't occurred to me that the inherent properties of honey could be used to minimize or even eliminate their use under certain circumstances. For me, this alone was worth the price of admission.

Also included is a fairly extensive guide to the additions of fruits and spices, with good advice on creating and blending your own creations, and some good "baseline" recipes to get you going, as well as a good discussion on sanitation practices.

Dated, not "compleat," but I'm still glad I purchased it

This book is *not* "compleat," and the main reason for that is that it's dated. It was published in 2003.

As a somewhat-experienced homebrewer, but who had never made a batch of mead, I purchased this book to learn about the craft. If you're already a homebrewer, then you'll find an awful lot in this book that you already know. I've never made wine before, but I suspect that the same comment would apply for an experienced home winemaker.

As I was almost ready to make my first batch, and I had some unanswered questions, I started to Google things and found references to things that are not mentioned in the book at all. A couple of notable items are degassing of the must and staggered nutrient additions, which are practices that arose after the book was published. In addition to those omissions (at no fault of the author, who is indeed a recognized expert on the subject of mead), I also found the book a to be little thin on certain technical details, like pitching rates, optimum fermentation temperatures and the like.

I still don't view the book as being money wasted and I'm glad that I got it, but I must caution the buyer that it is somewhat dated and is not "compleat." You'll still need to go online to various discussion boards and/or get guidance from experienced friends. And you'll find a lot in here that you already know if you're an experienced homebrewer.

Read it. Then read it again. Then memorize it.

There's not much to be said about this text that hasn't already been said by experienced and newbie mazers alike, but let me say it again in case any of you missed it: Schramm knows what he's about, and you need to read this book if you want to get into making mead. To put it mildly, I went from never having brewed anything to making award winning meads and setting up hives in my back yard within a couple of years. OK, so I'm obsessive. But that obsessive drive feeds on information, and there's no better starting point than the Compleat Meadmaker.

You don't necessarily HAVE to buy this book before you kill a bottle of Carlo Rossi and start your first batch of JAOM in a closet, but you should. Short of a meadmaking buddy who knows the ropes (or access to r/mead, who will also tell you to buy this book), this book is the best source of information you can get your hands on.

Now, I don't share Ken's thing for sour cherries, but I'll tell you this: that braggot recipe, the Don't Cry for Me, Spargentina? Yeah. That's a good recipe. And by good I mean two cases of it made me the most popular and least remembered person at every event I brought it to. Get brewing, learn, and drink like a viking!

Clarifies the alternative streams of modern thought.

It is not often that a book of moral philosophy provides both a deep education in the history and content of thought, and a concrete set of alternatives to transform modern living.
In this book, MacIntryre argues that the three supposedly incommensurable approaches to moral life that are left on the table in modern moral philosophy ought to be acknowledged. The battle between the three approaches is too often papered over. A better method would be to acknowledge to students that the Universities themselves are at war over these approaches, and are in fact an arena for this conflict, rather than an equal and uninvolved home for all ways of thinking.
He is right. Any student of philosophy recognizes quickly that the instructors are speaking within incommensurable theories, speaking past one another. This book explains why, and does not attempt to provide a solution, other than to recognize that a war is going on.
A Thomist like MacIntrye argues that a child must be brought up within the traditions of the truth as preparation to learn the truth. Yet modern science and the 19th century encyclopedists argue that truth is progressive. And Nietzche argues that an exposition of truth is merely the will to state the truth as seen by the person, a form of the will to power.
These incommensurable approaches can only be the source of conflict in learning. To win, MacIntyre argues, would require one to transcend the others by explaining the problems of the other modes of thinking, solving those problems for the other mode, and moving the debate on. None have as yet triumphed, although MacIntyre holds out hope for Thomistic arguments, based in Aristotle and moving from there.
His discussion of the Augustine/Aristotle debates of the 14th Century Parisian university is rivetting (OK, I admit it, I am exaggerating). This is a difficult but worthwile compendium of lectures, informative and educational. A reader will understand modern philosophy better as a byproduct of reading this book.

In Three Rival Versions Alasdair MacIntyre contends that there are three primary modes of moral inquiry. The first he calls encyclopeadia and is primarly a cateloging of moral principles understood as mirroring reality by post-Enlightenment moral philosophers. The second is the genealogical method which finds its orgin in Nietzsche's critique of morality. Although many think of these two modes of inquiry as exhaustive of the possible modes of inquiry, MacIntyre claims that there is a third alternative rooted in the Thomistic tradition. In Three Rival Versions MacIntyre articulates and defends this third alternative against the encyclopeadic and genealogical versions of moral inquiry. This work is an essential text for understanding the contemporary debates in moral philosophy.

A Brief Note on Nietzschean Genealogy and How it Relates to MacIntyre's Project

The thing that impressed me most with MacIntyre's great work (the so-called 'Trilogy' of "After Virtue", then "Whose Justice?, Which Rationality?", and finally, this book, "Three Rival Versions of Moral Inquiry: Encyclopaedia, Genealogy, and Tradition") is his discussion of the importance of `coherence' in a Tradition. By `coherence' I mean (and I believe he means something like this too) that those adept in the philosophical basis of any tradition, though they cannot answer everything, can agree on what the fundamental questions are and how one methodologically proceeds to attempt to answer them within a given tradition. ...Philosophical coherence, it seems, even in this limited methodological sense, demands that the modern world must (somehow) become one, that is to say, it must have only one Tradition. I would add that since MacIntyre maintains that there can be, and indeed must be, many differences of opinion between adherents of a tradition, that it follows that this 'Trilogy' must not be understood as a call for a single World State or society. A successfully universal world-tradition will have many different 'flavors' amongst many different peoples and polities.

The previous book in this Trilogy was titled "Whose Justice? Which Rationality?" And oh God! Those are indeed the questions today since there are so many incommensurable philosophical and religious traditions... But if there can be no adequate understanding between rival theories, as MacIntyre is often in that earlier book at pains to show, then - what? Well, then one wonders exactly how we fragmented late moderns can choose the Aristotelian-Thomist Tradition (as MacIntyre certainly wants) except by a Nietzschean act of Will. It would still seem that one cannot initially base practical activity (or lived choices) upon mere theory. Just as Plato wrote a Prelude to the Law (I am, of course, alluding to the late dialogue, "The Laws") that was itself not merely a law, and Hegel wrote a Preface to his "Phenomenology" that was not, and could not possibly be, entirely phenomenological, - so too one suspects that MacIntyre is here forced to write a 'preamble' to a 'hegemonic' Thomist Tradition that is not fully Thomist.

I understand these remarks, btw, to be more a comment on the inability of philosophical theory, any philosophical theory, to radically ground itself than a specific criticism of the position of MacIntyre. No theory can ever radically ground itself; thus one always proceeds to theory 'X', certainly in the beginning, in a non-'X' manner. ...Always. And with those comments I perhaps reveal myself to be an adherent (I hope a very skeptical adherent) of the 'postmodern tradition' (a genuine existing Contradictio in terminis, if you can believe that there is such a thing!) that our author herein designates as Genealogy. And our postmodern genealogists have pitched their tents precisely here, - on the question of origins. At the beginning of anything one always finds something else...

The Traditions that our author delineates in this book ("Three Rival Versions of Moral Enquiry") are Encyclopaedia, Genealogy, and Tradition. Each of these three traditions also, for purposes of explication, has a designated 'proof' text: they are, respectively, the fabled Ninth Edition of the Encyclopaedia Britannica, Nietzsche's "Zur Genealogie der Moral", and Pope Leo XIII' encyclical 'Aeterni Patris'. I honestly found comparing these three specific positions a bit curious. What MacIntyre designates as Encyclopaedia (Liberalism) and Tradition (Catholicism) have produced societies in which one can live and they have also produced great civilizations. Genealogy can certainly never do either. It is, at bottom, only a critical method, a surgeons scalpel, a weapon. Encyclopaedia and Tradition can legitimately be judged 'good or bad' and 'true or false'. Regarding genealogy, like the scalpel or the weapon, one can only enquire whether or not it has been used appropriately...

Now, I do not mean to admit by this that Nietzsche is, or intends to be, merely a critic. What MacIntyre designates here as 'Genealogy' Nietzsche considered to be only part of the 'No-Saying' critical part of his work. Zarathustra was intended to be the 'Yes-Saying' affirmative part of his work. (Regarding that, see his "Ecce Homo", the section entitled 'Beyond Good and Evil'.) The 'Yes-Saying' part of Nietzsche's work MacIntyre entirely ignores. I suspect that our author found it both useful and pleasant to use genealogy as a stick to beat 'Encyclopaedia' about the head and then use 'Tradition' to show the glaring inadequacies of genealogy as a tradition that could successfully form a world in which we all could live. But again, for Nietzsche, genealogical critique was, and could only be, but half the story. In MacIntyre's defense one should add that since virtually all of postmodern criticism has almost entirely ignored Zarathustra (and its purport) that therefore MacIntyre was justified to do so too insofar as this book is intended as a critique of both our miserable postmodernity and its liberal pretensions.

Traditional Catholicism, modern Liberalism (and also its would-be transformative avatar, Socialism) are above all (or in the case of socialism, one day could be) societies that have both norms and ideals. One applies these norms to approach the ideal; and, when necessary, one revises norms in light of the ideal. This is progress within a tradition. But what happens when incommensurable traditions come into conflict? That is the question MacIntyre intends to answer in this book. 'Really-existing' Postmodernism has become, perhaps somewhat paradoxically, little more than a 'narrative system' (i.e., a way to speak about and navigate through) the several incommensurable traditions that in fact divide our secular world. Our author is admirably striving to put an end to that seemingly permanent division.

MacIntyre is, to his credit, entirely a Universalist. (As is every genuine philosopher.) There were ever only two possibilities for him: Socialism and Christianity. He eventually, after a a long process, decided upon Christianity. So why is the Gigantomachia (battle of the giants) that is enacted within this book engaged without the participation of Marxism (and its dialectic) as one of the antagonists? I suppose we will never know. Perhaps he feared that the Universalism of both the Church and Marxism would militate against his desired result? (Probably, he thinks that there is no Marxist moral tradition that is entirely distinct from liberalism and therefore it would be inappropriate in this study.) Yes, (for our author) Marxism and Christianity have many similarities. In his much earlier "Marxism and Christianity" we learn that both "Marxism and Christianity rescue individual lives from the insignificance of finitude" and this gives them reason to hope. He later says in this same early book that "Liberalism by contrast simply abandons the virtue of hope. For liberals the future has become the present enlarged."

After MacIntyre's acceptance of Christianity the main targets of his mature work has been both liberalism and postmodernism, with Marxism (for our author, the only other possibility) usually (but not always) ignored. So then, is postmodernism to be considered merely the déjà vu of liberalism? I for one don't think this can be consistently maintained. For instance, Christianity, liberalism and marxism all promise a better future. Yes, it is certainly true that liberalism merely promises an improved liberalism while both Christianity and Marxism promise a transformative future. But postmodernity promises nothing (and delivers it too!). It is the decadence of a liberalism that can no longer even hope to meaningfully change itself. Now, genealogy counters this promise of a 'better future' with the supposed discovery of a 'different past'. That is to say, the genealogist knows that he can trump any promised future with a new vision (i.e., a new narrative) of the past. And, of course, this new vision (as mere story) is always immediately available to everyone.

This is what makes genealogy so insidious an enemy. The various progressive positions have to eventually make actual improvements in the world; even Christianity (which technically promises a better future only in the next life) had many apocalyptic movements demanding a better life now. But the genealogists can create different narratives regarding the origins of any religion, regime, or revolution, and eventually, in the midst of some crisis, a story will grow in popularity and then (perhaps) go forth and change the world. Of course, this is what Nietzsche expected of his 'Zarathustra'. The different pasts 'discovered' (or invented) by genealogy erode the master narrative(s) of the dominant tradition(s) and thereby allow his 'Zarathustrian' world to rise.

Or so Nietzsche hoped. But the genealogy of the overwhelming majority of postmoderns derives mostly from Foucault, not Nietzsche. The difference between them is the difference between psychology and history. Nietzschean 'Psychology' is based on what he considers to be the facts of human nature. Having understood (to his own satisfaction) the inevitabilities of human nature, Nietzsche can display that serene confidence in his 'Zarathustra' that has so amazed and mystified commentators of all stripes. But again, the present postmodern understanding of genealogy has actually become an amalgam of Foucault, deconstruction and triumphal constructivism. Like liberalism, this road only leads (at best) to supposedly improved versions of itself. So it is this 'really existing' genealogy that MacIntyre intends herein to show can never lead to a world in which all could live. And of course he does so quite successfully.

This is a brilliant conclusion to a magnificent trilogy. I recently found time to revisit them. It is easily one of the best philosophical performances written in my lifetime. MacIntyre should be very proud. This review intended to focus merely on his treatment of genealogy and how said treatment might relate to his overall project of writing a history of moral inquiry itself.

A POWERFUL DYNAMIC SYSYTEM SIMULATION TOOL

"The only thing constant in this universe and our lives is change", as explained in an ancient Hindu Scriptures.
How do we determine the impact of constantly changing parameters around us, and what measures can we take to prepare for those changes?
Can we manipulate the variables to have a desired outcome?
Can we prepare for the dire consequences if the variables are beyond our power of manipulations?
Can we allocate our resources appropriately if we know the consequences of inactions?..........
And many more questions can be answered by the technique of dynamic system simulation. The book has ample of examples, is very well written, and is easy to follow.
One's imagination is the only limiting factor in applying the techniques of Dynamo. It could be applied to study farming, ecological balance, impact of wrath or blessings of mother nature such as drought or rain, population shifts, and much more.
For a serious student of simulation technique, I strongly recommend this book.
